Apple Bread

This recipe can be used for a lot more than just pumpkin

Ingredients
  

  • 1 Cup Flour
  • 3/4 Cup Almond Flour You can use any type of flour here even regular flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Ground cinnamon
  • 6 Tbsp Swerve - Granulated Sugar Substitute Can Use Regular Sugar
  • 6 Tbsp Swerve - Brown Sugar Substitute Can Use Regular Brown Sugar
  • 1 Large Egg
  • 1 Cup Buttermilk 1 Cup Milk with 1 tsp Lemon Juice or vinager
  • 1/3 Cup Olive Oil Any kind of oil works
  • 2 Tbsp Honey
  • 1/2 tsp Vanilla Extract
  • 1 Cup Apple (peeled and chopped small) I have used Pumpkin, Mango, Pear, Plumbs. you can use any sweet fruit or veggie you like

Instructions
 

  • Preheat Oven to 350 Degrees
  • grease 9x5x3 Loaf Pan (I use a little olive oil and a paper towel to evenly coat the pans then I put a little flour in each pan and tap it so that the flour lightly coats all the surfaces.
  • In a Large Measuring cup put milk and lemon juice or vinegar mix well and let sit aside
    1 Cup Buttermilk
  • In the mixing bowl add all the dry ingredients(not the fruit) and mix on medium
    1 Cup Flour, 3/4 Cup Almond Flour, 1 tsp Baking Soda, 1/4 tsp Salt, 1 tsp Ground cinnamon, 6 Tbsp Swerve - Granulated Sugar Substitute, 6 Tbsp Swerve - Brown Sugar Substitute
  • While that is mixing add all the wet ingredients, and the egg (not the fruit) into the large measuring cup and whisk together
    1 Large Egg, 1/3 Cup Olive Oil, 2 Tbsp Honey, 1/2 tsp Vanilla Extract
  • Now pour the wet ingredients into the dry ingredients and mix until well combined
  • Stir in fruit with spatula and pour mix into Loaf Pan
    1 Cup Apple (peeled and chopped small)
  • bake for 45-60 minutes or until a toothpick comes out clean
  • cool in pans for 10-15 minutes
  • turn out onto wire rack to finish cooling

Notes

This recipe is awesome to eat warm.
